Spiced Vanilla Coconut Milk (scd, paleo)




I love the smell of fresh coconut milk. Even more, I love the smell of fresh coconut milk with luxuriant spices that evoke senses of comfort foods like pies and lattes. This is a drink perfect for both breakfasts on the patio or post dinner lounging with friends. I prefer to drink it warm, but I could see it being used as a coffee "creamer" as well. Prefer a bit sweeter? Just add a squeeze of honey and stir well.

Ingredients:

3 cups coconut milk (one batch of homemade)
2 tsp vanilla extract
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp allspice
1/4 tsp cloves

Directions:

Mix all of the above ingredients together using a Vitamix, hand blender, or whisk. Best served warm.
Refrigerate any leftover, and be sure to shake before drinking again. The spices settle to the bottom and the cream rises to the top when refrigerated.
