Football Fingers (scd, paleo)


So it's getting to be that time of year again. Leaves are changing, jackets are coming back to life like a risen Phoenix, and football is inevitably on the minds of millions around the world. Thus, the indoor parties commence. Cooking Paleo in groups can sometimes be a challenge, especially presenting finger-foods. These simple chicken fingers are sure to be a hit at any pot luck, regardless of the season, and they couldn't be easier to make.

Ingredients:

1 package bacon (one pound)
1.5 pounds chicken tenderloins
white pepper
garlic powder

Directions:

Lay out chicken tenders on an oven proof baking sheet or pan, not touching.
Lightly sprinkle with pepper and garlic powder.
Cut strips of bacon in half and lay one piece on top of each chicken tender.
Bake at 350 degrees for about 25 minutes (or until chicken juices run clear). Optional to broil for the last 5 minutes to achieve a crisper bacon.
Take off baking pan and let cool.
Serve with a dip of your choice. Or don't. They are just as good "plain."
