Avocado Kale Salad


Raw kale kind of scares me. I mean it's kind of rough looking and really green. Not a lot of non-paleo people even know what it is, and many paleo people don't really know what to with it other than make it into chips. Sure, it's great for you but if you never eat it, it's just intimidating. No worries friends, this recipe is super easy and I promise the kale is not difficult to wash, chop, or chew AND it's totally delicious.

Ingredients:


3/4 cup of pre-made guacamole (or 1 whole avocado + 1/2 tsp onion powder)

1/2 lime, juiced

3 large kale leaves, washed and de-stemmed (about 3 large handfuls worth, once chopped)


Roll the bunch of kale leaves together to form sort of a log; start at one end and chop into thin, bite-size strips, width-wise (about 1 centimeter in width).
Put the kale into a bowl
Add smashed avocado and lime juice.
Use hands and mix all together to evenly coat.
Wha-bam- its done!

Optional to top with equally as simple slow cooker buffalo chicken.
