Peach Sorbet with a Cacao Shell


Being as it is near a hundred degrees outside with over 80% humidity it is understandable that this peach sorbet didn't even make it all the way out my front door before it started melting into [delicious] juice. So it made for a crap picture but it tasted good. So I could make it again and try to get the perfect shot to post on here, but I am all for keeping it real and this is what my sorbet looked like when I ate it, therefore this is what you get to see. If you want something pretty to look at then Google "beautiful food." Anywho, this is mildly sweet yet refreshingly energizing.


Ingredients

Sorbet:
1 peach (pit out, of course)
1/4 cup grapes
2 cups ice

Shell:
1 tsp coconut oil
1 tsp coconut butter
3/4 tsp cacao powder
2 tsp honey



Directions

For the Sorbet:
In the above order, add ingredients to Vitamix blender. Start on speed 1, increase to 10, then turn on high. Let blend for about 3 minutes, using tamper to press ice into blades. It should for 4 mounds overtop of where the blades are and that's when you know it's officially done.

For the Shell:
Combine coconut oil and coconut butter until smooth, pressing the coconut butter into the oil with the back of a spoon if necessary. Then add cacao powder and honey, mix well.

Pour the cacao mix over the sorbet in a bowl or dish. The coconut oil and butter will naturally harden almost instantly. Enjoy!
