Quick Beef and Broccoli Stuffed Peppers
This is totally a cheat recipe for "stuffed peppers." Most stuffed pepper recipes involve packing the peppers full of ingredients, usually including rice and tomatoes of some form, and then baking it all in the oven for a little while to get all the juices and whatnot mixed together. This recipe is more like, soften the peppers, make the beef and broccoli mixture, and then stuff the b & b into the peppers and voila, it looks like you've spent a whole lot more time on these babes than what you actually did. If you want to say this is more like beef and broccoli in pepper-bowls you would not be wrong. Either way, they are tasty, healthy, and totally paleo.
Ingredients:
4 bell peppers
1 lb grass fed beef
1 broccoli stalk, the top florets, cut into small pieces
1/2 large jalapeno pepper, thinly chopped
1/2 medium purple onion, thinly sliced
4 cloves garlic
2 tsp Chinese five spice or Trader Joe's 21 Seasoning Salute
2 Tbsp of sesame seed oil (or if you're strict Paleo use coconut oil)
Cut the tops off of the bell peppers and take out all the insides like the seeds and membranes, until hollow. Discard the scraps.
Microwave the peppers in a glass bowl for 3 1/2 minutes, or boil them until just soft.
Meanwhile, throw beef, broccoli, jalapeno, onion, garlic, oil and spices into a frying pan over medium heat and cook, stirring occasionally, until beef is cooked through.
Then spoon the beef and broccoli into the empty peppers.
Serve hot and sprinkle sesame seeds over the top for kicks.
