Cinnamon Nut Crunch Cold Cereal (scd, paleo)



An scd/paleo cold cereal has been posted on my blog before. It was such a hit, though, that I thought I would come up with another version. I particularly like the way this one smells as it is toasting. Anytime your kitchen can be filled with the scent of wafting cinnamon waves is always welcomed.


1/4 cup unsweetened dried coconut flakes
1/4 cup cashews
1/8 cup Brazil nuts, sliced
1/4 cup sunflower seeds
1 Tbsp cinnamon
1 tsp salt
1 Tbsp honey
1/2 Tbsp coconut oil

Combine all of the above and spread into a shallow baking dish. I used a toaster oven and put on light-to-medium toast setting. When it dings or when you start to notice browning take the dish out of the oven and stir it around so that the more raw looking sides were up and the nuts could have an even chance of drying out. Repeat this until brown all over, about 4 times but it depends on how high your heat settings are. Do not burn! I have burnt this before and it tastes absolutely gross, there's really no saving it at that point. When it's done let it completely cool. Then, pour your cereal in a bowl and add some more honey to taste, because let's face it- we all at the store made cereal that was sweet. Use coconut milk or almond milk to make it a true snack.
