Avocado Chicken Salad (scd, paleo)
Another Pinterest inspired dish (thank you Becoming Betty)! I love that site, if you are not already following me on Pinterest, please click the little red follow button on the right of this page and do so! I love this recipe because it is perfect for take-out dishes like work lunches, afternoon picnics, and weekend trips. The ingredients are basic and it's packed with flavor. Eat it on saltines or solo.
1 Pkg boneless, skinless chicken breasts (2 or 3)
1 avocado
1/4 of an onion, chopped
juice of 1/2 a lime
2 Tbsp cilantro (or sub basil if you prefer)
some salt and pepper, to taste
Cook chicken breast until done, let cool, and then shred. Add all of the other ingredients and mix.
It's that easy.
If you love this you may also like this Avocado Tuna Salad. Just as easy and tasty!

I tried this recipe this weekend and my husband and I LOVED it! It's going to be our new "go-to" chicken salad recipe! Thank you for sharing!
ReplyDeleteBetsy,
DeleteSo glad it worked for you! Thanks for reading!
Do you dice the avocado or mash it?
DeleteI diced mine and then mashed it with the chicken.
DeleteAbsolutely amazing and very simple. Having it with Basmati rice, black beans, shredded lettuce and fresh salsa.
ReplyDeleteSounds delicious! Glad you love it!
Deletei absolutely Love this......Its Amazing!! So Simple too!! Thank you for sharing*:)
ReplyDeleteI made this for the football fans in my house on saturday! big hit! this is awesome.
ReplyDeletePerfect for game day!
DeleteMade it with roasted chicken, cubed, and half a small onion finely chopped, and kept everything else the same. It was delicious! Had it with Stacy's Pita Chips. Perfection.
ReplyDeleteI made this with the basil in substitute of the cilantro, and added a clove of garlic....Dee-Lish!!! Thanks so much for the "New Improved" chicken salad ;-)
ReplyDeletejust got done making this. I have to say one of my favorite healthy recipes I have ever tried.
ReplyDeleteWould love to try this. If refrigarated, does it go bad quickly because of the Avacado? Thanks
ReplyDeleteI kept mine refrigerated for three days and it was fine, stayed green too.
DeleteThe avocado should stay green for a few days because of the lime. If you don't use lime juice, it will definitely get brown.
Deleteif you put plastic wrap directly on top it will slow the oxidization process which will help keep your avocados from tuning as quickly...
Delete...and if you put the avocado pit back into the mixture (just for storage), it will not turn brown.
Deletehow do you prepare the chicken???
ReplyDeleteHowever you like. Bake it, throw it in the slow cooker, grill it. Doesn't matter, as long as you can shred it after it's done.
DeleteThis was amazing!!! I cant stop eating it!! I put somr fresh hot peppers and corn in it too!!
ReplyDeleteMy daughter forwarded this to me because all the ingredients are items that are typicallt in my fridge. I poached the chicken breast after seasoning it with salt, pepper, cumin, garlic and chili powder. I also added fresh pineapple chunks and used a mayan onion and fresh cilantro when blending. It is absolutely delicious. I am thinking some slivered toasted almonds next time. Thanks for posting this.
ReplyDeleteLove this, I used a roasted Chicken from Costco, which cut down on prep time. Used a red onion and dash of garlic powder. Yummy!
ReplyDeleteThis was Delish! I served it with toasted sandwich thins cut into triangles. My man even said he loved it.
ReplyDeleteThanks!
Can't wait to try this tonight. How many servings does this make?
ReplyDeleteI added shredded carrots and dried cranberries, put it on a bed of baby spinach and sprinkled slivered almonds. so good.
ReplyDeleteI had to tackle my husband to keep him from running off with the whole bowl to his "man cave" :-)
ReplyDeleteGrilling chicken breasts right now and I plan on adding walnuts to this recipe. Can't wait to see how it turns out. :)
ReplyDeleteMade this last night and it was fantastic! We made rice tortilla paninis with the filling and some Daya cheese (gluten-free, lactose-free.) I did add about 1T of kefir, some hot sauce and some chicken broth to mine. Definitely a keeper! Even my youngest child who doesn't like guacamole liked this. Thank you!
ReplyDeleteJust made this and it is so good, lucky for me, I am the only one who likes avocado. Will be making this many times in the future.
ReplyDeleteI love this salad so much that I am writing a blog post about it at http://teachingisagift.blogspot.ca. I have started writing posts on Sunday that feature foods I make for for myself for lunch at school. I hope you don't mind me using your photo in my blog post, as I was not smart enough to take my own picture...I was too busy eating the salad! This has got to be one of the BEST chicken salads I have ever eaten! Please stop my blog and check out the post. I will be sure to link it back to your site!

Sidney,
DeleteThat's a great idea- thank you for sharing!
This was delicious, and I do not like avocados.
ReplyDeleteI use "wholly guacamole" and nonfat plain yogurt, chop up a bit of celery to give it some texture. Did you see the tip on Pinterest to use the paddle attachment in your blender/mixer to shred the chicken. It is amazing. I have the Ninja blender so use that.
ReplyDeleteI'm a new follower and this looks delicious!! Can't wait to give it a try!

Prepping the chicken now to make this tomorrow for lunch! I'm thinking of stuffing it into a roasted poblano pepper maybe? Looks so delicious!
ReplyDeleteYum! An extra roasted chicken breast and a very ripe avocado. I used green onion and garlic and onion powder. We loved it! Thanks for sharing your brilliant idea!
ReplyDeleteDid I miss a step? Mine is extremely dry. Used two limes. Can I add Mayo, yogurt or something else to make it bind together like normal chicken salad?
ReplyDeleteTry a Tbsp of mayo or another very ripe avocado.
DeleteI found this on Pinterest a few months ago and, no joke, I have been making it almost weekly since. My husband and I can't get enough, which is great becauase it is so guilt-free! Thanks for the amazing recipe!
ReplyDeleteThis is absolutely delish! I think it's the best avocado dish I've ever had. I used a rotisserie chicken and added a little hot sauce. YUMMY!!!!!! Thanks for the recipe.
ReplyDeleteJust made this for lunch. Will never make chicken salad any other way again. Thank you!!
ReplyDeleteThank you so much for this recipe! My husband and I love it!!!
ReplyDeleteThis would make only 1 serving for me! Oh well.....it's cute how everyone makes completely different versions and says 'Thanks for the recipe!'...Shred some chicken, add avocado and any other ingredients you want...GO! :)
ReplyDeleteFantastic. Hubby was away...I threw 2 breasts in crock pot...shredded...and followed recipe... adding garlic and fresh Chiles. Amazing as is. Filled me up for three meals!
ReplyDeleteSorry your recipe got stolen by some douche on Facebook. Personally I'm not a big chicken salad fan (or any salad that is not made of salad -- blame it on church potlucks!) but I'm definitely going to check out the rest of your blog. :)
ReplyDeleteYum this was delish! One for the whole family!
ReplyDeleteThank you for sharing this amazing dish. We are planning a simple picnic this weekend and I cannot think of a different dish to include. I am absolutely going to try this out. I do hope the kids will love it.
