Nearly every morning my husband makes coffee. And nearly every morning there is just enough left in the bottom of the carafe for about 1/2 cup that gets wasted. Wasted, that is, until I decided to pour this excess into some old-fashioned ice cube trays. That's right, I still have those clunky plastic things. Anyways, so these coffee ice cubes have been accumulating in my freezer, waiting for an idea. Then, it suddenly came to me- java frosty. With some extra coconut milk in my fridge, there was little more that was needed. This is one of the simplest recipes you can make, completely guilt-free. The taste? Amazing. If Wendy's sold a coffee flavored version of a frosty this would be the secret recipe. Perfect for those with food allergies, but even for those sans-allergies, you'll never know it's dairy and sugar-free.
2 cups frozen coffee ice cubes
1 1/2 cups coconut milk
1/2 cup shredded unsweetened coconut flakes
5 dates, pitted
Throw all of the above ingredients into a Vitamix high performance blender. Blend on high until thick but well pureed, about 2 minutes. You will need to use the tamper to push everything into the blades. Voila, that was easy. Enjoy by the spoonful or through a swirly straw.
