Zucchini Noodles (scd, paleo, vegan)



Chances are that you have heard of this before, but I have never posted about them, so here it is. A simple substitution for tradition noodles that is both literally green and scant on calories, fat, and carbs are zucchini "noodles." I am sure the size and shape of the strips of zucchini would be much more concise and uniform if I had the proper kitchen tools- like a mandolin, but a knife works just the same. In fact, I kind of like the variation, it gives the dish some character.


2 or 3 medium sized zucchini squash
quite a bit of olive oil (or oil of your choice)
3 cloves garlic, sliced
salt and pepper to taste
shredded parmesan cheese is optional

Slice the squashes into large slices, as usual, length--wise, as though you were going to grill them. Then take those flatter slices and cut length-wise into strips, as wide or as narrow as you desire. Meanwhile, in a hot pan add a few tablespoons of oil and start sautéing the garlic cloves. Add the zucchini strips as they become ready. Once you have all the squash sliced and in the pan, flip/stir occasionally to ensure even cooking. when the pieces are easily poked with a fork and start getting translucent, the dish is done! Take it out and sprinkle with lots of salt and [white] pepper (&cheese). Easy, huh?
