Paleo Pepper Nachos
This is one of those "why didn't I think of this before" type of deals. Using baby sweet peppers as a chip base for nachos is genius.
Ingredients:
1 pound grass fed beef
2 cloves garlic, pressed
1 Tbsp chili powder
1 tsp white pepper
1 tsp ground cumin
About 10 to 12 small sweet baby bell peppers, halved
hot sauce, banana peppers, and Parmesan cheese (optional)
How to:
Heat ground beef, garlic, and other spices in a pan over medium high heat. Cook until meat is no longer pink and then let simmer for a few minutes.
Cut baby peppers in half length-wise and cut out the middle (clearly by the picture I wasn't too worried about leaving some of the seeds in there). Lay out on a baking stone, or whatever you have, and spoon the cooked meat into the centers. Top with banana peppers and grated cheese if desired.
Broil for about ten minutes.
Eat.

What a genius and tasty idea. We always have these baby peppers around, too. Thanks for the recipe! Will be trying this out soon.
ReplyDeleteI love the idea! Can't wait to try it. I will probably modify the meat out and add other veggies/rice to make a salsa type filler...
ReplyDeleteLove the eat at the end!
ReplyDeleteNot sure if this goes with your plan but I also like to grill these peppers and stuff with the filling. Also to make pizza peppers the same way, sausage, pepperoni or whatever you like with tomato sauce, garlic, Italian herbs, cheese. Grill for flavor.
ReplyDeleteI can't eat cows milk so I topped them with goat cheese. They were delicious!
