Raw Cookie Dough (scd, paleo, raw)



Want to eat a healthy cookie, but have no time or willpower to make one from scratch? What about cookie dough, the stuff you were never really supposed to eat raw, but the deliciousness outweighed the chance of salmonella every time when you were a kid? This is for you. It is such a fast thing to whip together as a sweet treat for when you are craving "bad" food. Very customizable too, add any extras you like and the flavors are endless. It tastes just like cookie dough, with no processed sugars, grains, or raw eggs.

Cookie Dough:
1/2 Tbsp softened butter or coconut oil
1/6 cup shredded, unsweetened coconut flakes
1/4 cup almond flour
1/2 tsp. vanilla extract
1 tsp. ground cinnamon
1 healthy dash of salt
1 to 2 Tbsp. honey

Changeable "extras"
Scant palm full of roasted almonds
A few raisins
(also try adding other dried fruits, whole fruits, peanuts, walnuts, coca nibs, etc.)




Mix everything together in a bowl. This is makes one serving-ish. If it is too much to finish, it keeps in the refrigerator well.
Don't worry if your butter is not softened, just break off what you need and throw it in microwave in the bowl for about 10 to 20 seconds. If you throw everything else in too, before putting it in the microwave, it makes your kitchen smell like Cinnabon.

  3. Can you use coconut flour in place of almond flour?

    1. I suppose you could, but since coconut flour is made of dried coconut it tends to absorb a lot of moisture. If you choose to use coconut flour I would reduce the amount and perhaps increase the amount of oil.

    2. I just made a version of this with coconut flour. Just remember you can not substitute 1:1 with coconut flour. I just added about a tablespoon of coconut flour instead. Although it might have done well with two tablespoons. I didnt have to change the liquid amount this way.
