Paleo Banana Strawberry IceDream Sandwiches



I realize it may be very cold in some regions of the world at this moment. Thankfully it doesn't matter what season is is; everyday is a good day for ice cream. There is no dairy, of course, in this recipe but the texture is just like that of ice cream. Keep these treats in the freezer for a perfect afternoon or weekend snack.

Ingredients:

Sandwich:
1 cup dates, pitted
2 Tbsp honey
2 Tbsp coconut oil
2 tsp cacao powder
1/2 cup almond flour
1/4 tsp salt

Icedream:
2 frozen bananas
5 strawberries

Directions:

To soften the dates, place in a microwave safe bowl and microwave for thirty seconds.
Take a spoon and smash them around until they no longer hold a shape.
Add honey, oil, cacao powder, almond flour, and salt. Mix well.
In between sheets of parchment paper, place the sticky mixture in the center and use a rolling pin to spread out into a thin sheet, trying to get a rectangular shape and a thickness of less than half an inch. When finished rolling place the parchment paper full of date mixture into the freezer on a flat surface for at least an hour.

When the sandwich sheet has become firm enough, take out of the freezer and using a knife or pizza cutter, slice lines to form equal sized rectangles. About three inches by two inches, or whatever you prefer.

Now throw the frozen bananas and strawberries into a blender like Vitamix, and blend on high until a smooth consistency is reached.

Scoop the banana/strawberry icedream out and onto one rectangle of a sandwich half. Then place the top sandwich half on. Freeze for at least another hour.
Then take out as wanted, and enjoy!
