Flour-Free Peanut Butter Bars (scd)


Want a gluten-free dessert with a cake-like texture without using flour (even nut flours)?
Surprisingly with only 6 ingredients this recipe delivers that. While the peanut butter is the main ingredient, it pleasantly is not an over-powering flavor, nor are these bars overly sweet. They provide just enough sweetness to satisfy that after-a-meal-craving, without feeling sinful. I took these to a party and even some not-so-health-conscience friends of mine complimented the flavor of these bars (just don't have them try it right after eating cheesecake, their taste buds will be disappointed in comparison). Happily, this is a very simple recipe that will please everyone.



Ingredients:

2 cups peanut butter **
3/4 cup honey
2 eggs
2 tsp vanilla extract
1/2 tsp baking soda
1 tsp salt

Mix the peanut butter, honey, eggs, vanilla, baking soda, and salt together in a bowl with a fork. Be sure to integrate the ingredients well, since chunks of egg or baking soda could easily hide behind the thick peanut butter.

Bake in a 9x13 dish at 300 F degrees for 25 minutes, until the edges start to turn golden brown.

I hear these are also very good frozen, but they did not last long enough for me to try!

  2. These came out fantastic. I was skeptical when mixing it together because the texure was like putty but after cooking they turned out like a blondie. I absolutely LOVE the texture and taste. Perfect for a snack or dessert! Enjoy! !
