{almost} Pesto Chicken


Here's a quick "what's for dinner tonight" recipe.

I say almost pesto because the pine nuts are left whole.

Blend together 2 cups fresh basil leaves (packed) with 1/2 cup olive oil and 1/2 cup Parmesan cheese. After that's made into a dressing add 1/4 cup of raw pine nuts.

Pour mixture over a package of chicken breasts (3 medium sized)

Bake at 350 degrees for about 40 minutes- until done.

Voila. Italian dinner SCD-style.
