Cocoa-Free Black Bean Brownies

So sometimes just the color of food tells our brain it is chocolate. Thankfully, I believe that is the case with these "brownies." They are the exact color of chocolate, but with no cocoa whatsoever. I also believe they are probably more nutritious for us, since they are made with protein-packed beans and little honey. I've made this many times before, and has even been welcomed by non-SCD-er's.

Here is the source recipe.

2 cups black beans (prepared by soaking and cooking until done)
2 bananas (ripe & spotted)
1/2 cup honey
1 Tbsp cinnamon
1 tsp vanilla extract
1/3 cup almond flour
1/2 tsp baking soda

Throw all the ingredients into a Vitamix. If you do not have one, then I assume any blender may work, hopeful you don't have bean chunks. Mix until smooth and then pour into a square baking dish, greased. Bake at 350 for about 40 minutes, or until a toothpick can be inserted and come out clean.

Let cool before cutting.

*Tip: If these are not sweet enough for you, try adding some SCD Caramel to top. Divine!

  1. Look yummy! To make these truly SCD legal, I'll try substituting baking soda for the baking powder...
