4 Egg Superfood Scramble
This is what happens when I need to go to the grocery store, and equally as much want to eat before taking that trip. This is called "throwabunchofstuffinapanwithsomeeggsandseewhathappens" but the official title is 4 Egg Superfood Scramble.
Ingredients:
2 Tbsp coconut oil
1 cup of Sweet Kale's 7 Superfood salad mix*
1/2 cup mushroom pieces
1 cup cubed cooked chicken
4 eggs, preferably pastured
salt and pepper, to taste
*I found this great kale salad stuff in a bag at Publix the other day. I think it's also available at Costco but I don't shop there. It has chopped kale, julianned broccoli, thinly sliced brussels sprouts, and some chicory. It can easily be made in your own kitchen(especially if you are doing scd and don't want to have anything premade) just chop up some or all of the above ingredients nice and thin so that they cook quickly. The mix also comes with some sweetened dried cranberries and premade dressing stuff but I just tossed that in the trash. (I threw it on the grooooounnd!)
Directions:
Heat coconut oil over medium heat.
Add veggies, cook until tender-crisp, add cooked chicken and leave until warmed through.
Add eggs and quickly scramble in pan with spatula, mixing in the veggies.
Cook until done, about 3 minutes.
