Chinese Fried Cauliflower "Rice"




I am easily intimidated by lengthy recipes. For instance if I find a list of ingredients more than, say, eight separate lines I automatically assume it's too complicated a dish to make. Or if it is going to take more than one pot or pan to make, I think about having to do piles of dishes and I then make an excuse to put off making it until another night. For the longest time I have felt this way about making cauliflower rice. Assuming the actual turning cauliflower florets into rice was a huge chore I never really gave it a chance. Being a Vitamix affiliate, you would think that I would have thought to use that nifty blender to do the ricing job earlier, but I did not discover that it could accomplish this task until very recently. How to rice a head of cauliflower is so easy with a Vitamix! Simply cut off the florets into pieces as you would any other time. Turn the blender on variable speed 2 and put in about a cup of florets at a time, using the tamper to press the vegetable into the blades. It only takes a few seconds and when the cauliflower is the correct consistency, turn off the blender and set the riced cauliflower in a bowl. Continue until the entire head of cauliflower is finished. Then follow this recipe:

2 Tbsp butter
1/2 chopped onion
1 large head of cauliflower, riced
1/2 bag frozen peas and carrots
2 Tbsp Trader Joe's 21 seasoning salute*
2 Tbsp sesame seed oil
2 cooked grilled chicken breasts or pork chops, cubed (optional)

lots of salt to taste

Melt the butter or oil in a large pan over medium heat and add onions. When onions are translucent add the riced cauliflower, peas and carrots, seasoning, and sesame seed oil.  Stir to distribute the oil evenly then cover pan and leave on medium heat for 10 to 12 minutes. Stir occasionally to ensure the vegetables don't burn. Once the cauliflower is cooked through and not crunchy it is finished. Turn off heat and add cubed chicken or pork if you desire.

*If you are following SCD and don't feel comfortable using Trader Joe's 21 seasoning salute because you are unsure if all of the ingredients are legal then make a spice mix of your own using whatever you have on hand- garlic powder, black and white pepper, dried onion, parsley, basil, etc.
