To be completely honest this recipe comes from the October 2012 issue of Shape magazine. I'm not claiming any credit or creativity to this recipe. But it is delicious and diet-friendly.
2 tsp olive oil
4 wild king salmon fillets, skin on
1 tsp salt
black pepper
1 tsp butter (or oil)
1 onion, peeled, halved, and thinly sliced
2 cinnamon sticks
2/3 lb sweet-tart apples (about 2 medium)
1 tsp white wine vinegar, plus more to taste
1. Heat olive oil in large skillet over high heat. Season salmon lightly with salt and pepper, transfer skin-side down, to the pan. Cook for 2 minutes, until undersides are golden. Flip fillets and cook for another minute, until golden. The fish will not be fully cooked but transfer to a plate and set aside.
2. Add butter (or more oil), onion, and cinnamon to skillet. Reduce heat to medium and cook, stirring occasionally, for about 15 minutes or until onions are soft and deep golden brown.
3. Quarter, core, and thinly slice apples; toss into pan with a pinch of salt. Cook for 5 to 10 minutes or until apples are almost tender. Place salmon fillets on top of apple-onion mixture. Cover and cook over medium-low for 2 to 3 minutes or until salmon is just cooked through. Transfer salmon to places. Add white wine vinegar to apple-onion mixture and stir to combine. Add more vinegar to taste if you so choose.
Unexpectedly, the salmon and sweetness from the apple complement each other nicely. This is a great dish to make for friends. It sounds fancy but the ingredients are simple, whole, and easy to prepare.
