Avocado Chicken Salad (scd, paleo)
Another Pinterest inspired dish (thank you Becoming Betty)! I love that site, if you are not already following me on Pinterest, please click the little red follow button on the right of this page and do so! I love this recipe because it is perfect for take-out dishes like work lunches, afternoon picnics, and weekend trips. The ingredients are basic and it's packed with flavor. Eat it on saltines or solo.
1 Pkg boneless, skinless chicken breasts (2 or 3)
1 avocado
1/4 of an onion, chopped
juice of 1/2 a lime
2 Tbsp cilantro (or sub basil if you prefer)
some salt and pepper, to taste
Cook chicken breast until done, let cool, and then shred. Add all of the other ingredients and mix.
It's that easy.

Do you dice the avocado or mash it?
DeleteI diced mine and then mashed it with the chicken.

DeleteMade it with roasted chicken, cubed, and half a small onion finely chopped, and kept everything else the same. It was delicious! Had it with Stacy's Pita Chips. Perfection.

ReplyDeleteI kept mine refrigerated for three days and it was fine, stayed green too.
DeleteThe avocado should stay green for a few days because of the lime. If you don't use lime juice, it will definitely get brown.
Deleteif you put plastic wrap directly on top it will slow the oxidization process which will help keep your avocados from tuning as quickly...
Delete...and if you put the avocado pit back into the mixture (just for storage), it will not turn brown.
Deletehow do you prepare the chicken???
ReplyDeleteHowever you like. Bake it, throw it in the slow cooker, grill it. Doesn't matter, as long as you can shred it after it's done.

ReplyDeleteMy daughter forwarded this to me because all the ingredients are items that are typicallt in my fridge. I poached the chicken breast after seasoning it with salt, pepper, cumin, garlic and chili powder. I also added fresh pineapple chunks and used a mayan onion and fresh cilantro when blending. It is absolutely delicious. I am thinking some slivered toasted almonds next time. Thanks for posting this.
ReplyDeleteLove this, I used a roasted Chicken from Costco, which cut down on prep time. Used a red onion and dash of garlic powder. Yummy!

ReplyDeleteMade this last night and it was fantastic! We made rice tortilla paninis with the filling and some Daya cheese (gluten-free, lactose-free.) I did add about 1T of kefir, some hot sauce and some chicken broth to mine. Definitely a keeper! Even my youngest child who doesn't like guacamole liked this. Thank you!

ReplyDeleteI use "wholly guacamole" and nonfat plain yogurt, chop up a bit of celery to give it some texture. Did you see the tip on Pinterest to use the paddle attachment in your blender/mixer to shred the chicken. It is amazing. I have the Ninja blender so use that.

ReplyDeleteDid I miss a step? Mine is extremely dry. Used two limes. Can I add Mayo, yogurt or something else to make it bind together like normal chicken salad?
