[You Wouldn't Believe] Grain-Free Blondies (scd, paleo)




Slightly chewy and loaded with flavor, these are a great scd and paleo friendly snack. This is also a good recipe to use if you have assorted ingredients left over that need to be used. For instance, instead of Brazil nuts, you could sub walnuts, peanuts, or any other nut. Also some dried, chopped fruit might work, and if butterscotch chips were even close to being scd legal, those would be a perfect addition as well. It's slightly reminiscent of a "kitchen-sink" cookie, but yes, more like a Blondie in that it's cake-like in texture. And if you find this not quite sweet enough to satisfy your craving, you could add some scd-legal frosting to the top.


Mix:
4 Tbsp softened butter (or oil for dairy-free)
1 1/2 cup almond flour
1/2 tsp baking soda
4 Tbsp honey
1 egg
1 tsp vanilla extract
1/2 cup dried, shredded coconut
1/2 cup chopped Brazil nuts
dash of salt
dash of cinnamon (optional)

Throw everything in a bowl and mix it all together. Throw it into a baking dish- so versatile you can use whatever shape you want- about 9" in diameter. Bake at 350 degrees for about 18 minutes, until the center is set and the color is light golden brown.
