Simple Coconut Macaroons


Sad news everyone: Jennie's Macaroon's are no longer scd-legal. They are made with cane sugar instead of honey now. Ridiculous change if you ask me. Previous attempts to contact the company via email and phone has lead to dead ends. While it's not nearly as convenient to make your own sweet treats versus buying macaroons pre-packaged, this recipe is only 3 ingredients and is very easy to make. I used my Kitchen-Aid mixer to whip the egg whites and it only took a few minutes.

4 egg whites
2 cups unsweetened shredded coconut
1/2 cup honey

Whisk egg whites and honey together until the whites form stiff peaks. Fold in unsweetened coconut flakes. Bake at 350 degrees for 15 minutes.
