How to Rice Cauliflower in a Vitamix
Step by step (day by day...just kidding) here are very unofficial instructions on how to transform an ordinary head of cauliflower into a mountain of grain-free "rice."
1. Rinse off a head of cauliflower and cut off the green leaves and stemmy parts.
2. Cut off the little florets and attached stems, as though you were going to boil it.
3. Get out your Vitamix and have the top ready with the tamper through the top hole.
4. Place a handful of cauliflower florets into the Vitamix container (about a cup or so) and put the lid on. Turn the machine on to variable speed 2 and press the cauliflower into the blades with the tamper. After about 5 seconds the cauliflower should be in little rice shapes. It's done. Repeat in small batches until the whole head is riced.
Okay so that only took four steps, pretty easy, huh? Please don't waste your money on a ricer that can do nothing but make, well, rice. A Vitamix does so much more. Check out the page here for more info. Now you can make all kinds of paleo and scd recipes that use cauli-rice. Hooray!

Also another way to rice cauliflower is to fill the Vitamix container with the cauliflower then fill with water until the cauliflower floats.
