Sweet & Sour Chicken (scd)
Ah, the Asians, they have a real knack for making delicious friend chicken smothered in sweet sauces. So when I saw this original non-paleo recipe I knew I had to adapt it and make it ok for the paleo and specific carbohydrate diet. Since the things I subbed were relatively close to the actual recipe, I think it has a very similar taste. After making these, I couldn't stop eating them, this is seriously one of my most favorite recipes of all time. I hope you like:
Chicken:
3-4 boneless chicken breasts
salt & pepper, to taste
2/3 cup of coconut flour
2 egg whites
1/4 cup coconut oil
(Or use this chicken nugget recipe as a base)
Sweet and Sour Sauce:
3/4 cup honey
4 tbs scd ketchup
1/2 cup vinegar
1 tsp garlic powder
Preheat oven to 325 degrees. Cut chicken into cubes.
Mix the salt and pepper in with the coconut flour.
Dip the chicken pieces in the egg and then lightly coat in the coconut flour
Heat your 1/4 cup oil in a large skillet and cook your chicken until browned but not cooked through.
Place the chicken in a 9x13 greased baking dish. Mix all of your sweet and sour sauce ingredients in a bowl and then pour evenly over the chicken. Bake for 30 minutes and during the baking process you will need to turn the chicken every 10 minutes.
Love the recipes...but find the font used on the website VERY difficult to read.

I have been on the SCD for almost 5 years, and was glad to see some new things out there; in particular this recipe. Thanks also for the ketchup recipe, and for sharing your letter from the tomato paste company. I had never used tomato paste before given the guidance in BTVC, and the fact that I am sensitive to illegals. I agree with you that foods have come a long way since BTVC was published, and felt confident in moving forward with the recipe for the ketchup after reading the letter. Anyway, thanks again and good luck in health and life.

No more than one inch thick. They can be longer, like chicken fingers but just make sure they're all about the same thickness so that there is an even cooking. Thanks for following. Your support is very appreciated!
